Gail Straker, BA.Ed

Certified Advisor with The Noakes Foundation, The Nutrition Network | Lipedema Community Manager

Once she discovered the health benefits of a low-carb, grain-free, and sugar-free lifestyle and how intermittent fasting enhanced those benefits, she shared that knowledge with her friends and family.

She has since taught over a dozen loved ones to take charge of their health, lose weight, and come off medications by making dietary changes.


Carlos Zumarraga Novelo, MD
Consultant, Lipedema Simplified Coaching Collaborative Global Network

Carlos graduated from the University Anahuac in 2006 as Medical Surgeon and became certified as an International Medical Graduate in 2010.

After visiting the Duke Medicine Clinic in North Carolina USA, he authored the Programa Low Carb/Keto in collaboration with the Nutrition Network in 2020. He attained the level of Clinical Researcher with the Noakes Foundation in 2021.

Currently, his medical practice, Clinica Keto, is in Yucatan, Mexico, where he lives with his wife Cinthia and two children. He enjoys fishing, snorkeling and
football/soccer.

Carrie has a bachelor’s degree in Nutritional Medicine from Paramount College in Western Australia, where she graduated at the top of her class.

She has qualifications in Functional Nutrition and Lifestyle Medicine through the Functional Nutrition Alliance in the United States and is a certified Keto Coach.  

Living in sunny Western Australia,
Carrie loves spending her weekends getting outdoors, fishing, swimming, or camping with her husband and 6 kids.

Kristin Arntz, NTP
Consultant, Lipedema Simplified Coaching Collaborative Global Network

Kristin worked as a surgical medical assistant when she realized that many surgeries could be averted with proper nutrition & lifestyle.

In the Fall of 2019, she was diagnosed with both Ehlers-Danlos Syndrome, a connective tissue disorder, along with Lipedema. Certain that nutrition could make a difference, Kristin trained with the Nutritional Therapy Association graduating in November 2021 with her Nutritional Therapy Practitioner certification (NTP).

She now shares her knowledge of nutrition and bio-individuality, specializing in Fat, Lymphatic, and Connective Tissue Disorders.
